HEIRLOOM TOMATO AVOCADO CAPRESE SALAD
This tomato avocado Caprese salad is my favorite summer recipe from Cook Eat Paleo. It is so easy to make and nutritious.
Growing up in an Italian household Caprese salad was common but made a little different. Typically it’s made with tomato, basil leaves, fresh mozzarella, and drizzled with extra virgin oil with a dash of sea salt and black pepper. And let’s not forget the Italian bread!
Although I love the traditional recipe, this recipe brings an interesting twist. I really love the taste of avocados and they are filled with good fats, so Cook Eat Paleo’s featured recipe fulfills my taste buds!
Both recipes have nutritional value. The extra virgin olive oil also provides you with good fats. Keep in mind that you are using very little olive oil in this recipe, so you will not be consuming too many fats. If you look closely at your own daily diet, you will find that most of us do not eat enough healthy fats.
I recommend an app called MyFitnessPal. This app is a great tool to track your food, exercise, and goals. I have used and suggested this app to friends, family, and my personal training clients.
Tomatoes are a good source of healthy carbs and are a low sodium food. I always like to add different types of tomatoes to dishes I make, especially summer salads, because I think they add more flavor. I add tomatoes to quinoa, mixed greens, and pasta salads.
Consider the nutritional value to all the food choices you make, and exercises. You will find that your body and mind will feel great eating cleans foods and exercising daily!
